Sure.&nbsp; But, I was looking for something different.&nbsp; And I found and insanely flavorful iteration of stew that surprisingly lacks the common veggie component.&nbsp; To wit\u2026 potatoes, carrots and celery\u2026 gone!&nbsp; Horrors!&nbsp; Also, the recipe eliminates the pain-in-the-tail-flour-the-meat prep stage. {SPOILER ALERT} I am a fan of dropping nuisance prep steps.&nbsp; Words about the \u201cside dish\u201d.&nbsp; Words won\u2019t suffice!&nbsp; This <em>popover<\/em> is off-the-charts delicious!&nbsp; Regards the name:&nbsp; Dutch Baby.&nbsp; My research suggests that the name is a blur of \u201cDeutsch\u201d; and the basic recipe was for a <em>German <\/em>(Deutsch)Pancake.&nbsp; And the dish could be made sweet or savory.&nbsp; Here, clearly the savory version is in play.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For\nwine\u2026 I wanted a full flavorful wine that could \u201chandle\u201d the richness of the\nstew.&nbsp; As someone who prefers country styles of wine from France and Italy,\nthere is still a part of me that loves the atypical blends that our Cali producers\nassemble.&nbsp; There is a marvelous disregard for adhering to bottling law\nthat prescribes what grapes can be used in Bordeaux, for example.&nbsp; Or the\nRh\u00f4ne.&nbsp; Sequum Mixt is a magical blend of varietals that flout European\nappellation dictates!&nbsp; And that has to put a smile on your face!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sequum\nMIXT\u201913 (Napa, CA)<br \/>\n<\/strong>Most\nof the fruit for MIXT is from the 1\u00bd-acre Kidd Ranch in Napa Valley. This\n32-year-old, dry farmed vineyard is located on the valley floor within St. Helena. The whole is greater than the sum of the\nparts: the blend of Cabernet Sauvignon, Zinfandel, Syrah, and Petite Sirah confirms\nthis axiom. Discover how the grapes\u2019 separate identities become uniquely\nintegrated once MIXT or thoroughly co-mingled. This is a hearty coming-together\nof Cabernet Sauvignon, Zinfandel, Syrah and Petite Sirah. It dances in baked\nplum and raisins as a tartness of cherry and savory dried herb counterbalances\nthe ripeness and sizable tannin.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Coffee &amp; Wine Beef Stew<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"367\" height=\"491\" src=\"http:\/\/summerofjim.com\/wp-content\/uploads\/2019\/08\/coffee-and-wine-beef-stew.jpg\" alt=\"\" class=\"wp-image-110083\" srcset=\"http:\/\/summerofjim.com\/wp-content\/uploads\/2019\/08\/coffee-and-wine-beef-stew.jpg 367w, http:\/\/summerofjim.com\/wp-content\/uploads\/2019\/08\/coffee-and-wine-beef-stew-224x300.jpg 224w\" sizes=\"auto, (max-width: 367px) 100vw, 367px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ingredients<\/strong><br \/>\n6\nounces of Tanqueray Gin<br \/>\n\u00bd\nounce of Noilly Pratt Dry Vermouth<br \/>\n2\u00bdlb\nChuck roast cut into 1\u201d pieces<br \/>\n1\nCup Beef Stock<br \/>\n3\nCups of Coffee<br \/>\n1\u00bd\nCups sliced baby bella mushrooms (can be more)<br \/>\n1\nmedium onion sliced<br \/>\n\u2154 Cup Dry\nred wine<br \/>\n3\ntbs Olive Oil<br \/>\n2\ntsp diced garlic<br \/>\n1\ntsp salt <br \/>\n1\ntsp pepper<br \/>\n1\ncup frozen peas<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Directions<br \/>\n<\/strong>1.\nPut gin and vermouth into a glass pitcher, fill with ice, stir vigorously while\nincanting, \u201cYou who know all, thank you for providing us juniper and all the\nother obscure ingredients responsible for creating this sacred liquid!\u201d Strain\ninto a pre-frozen Martini glass of admirable size.&nbsp; Skewer the olives on\none of those tacky cocktail swords, place in glass. Immediately begin\nconsuming.&nbsp; Now you can begin the food prep, and the cooking!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2. Season beef with salt and pepper. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">3. Heat oil in dutch oven on high.&nbsp; When the oil is at high\ntemp, brown beef on all sides.&nbsp; Do not overcrowd the dutch oven, cook in\nbatches as necessary.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">4. Remove beef from the dutch oven, reserving any fat in the oven.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">5. Reduce heat to\nmedium. Saut\u00e9 onions, mushrooms and garlic in the dutch oven \u2018til onions and\nmushrooms are reduced.&nbsp; Add coffee, beef stock and wine to the vegetables\nand stir. Add beef &amp; juices. &nbsp;Bring to a boil, and then reduce to low.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">6. Cover and simmer for 3 hours. Add frozen peas, mix well &amp;\nserve.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Garlic-Rosemary Dutch Baby<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"372\" height=\"496\" src=\"http:\/\/summerofjim.com\/wp-content\/uploads\/2019\/08\/dutch-baby.jpg\" alt=\"\" class=\"wp-image-110084\" srcset=\"http:\/\/summerofjim.com\/wp-content\/uploads\/2019\/08\/dutch-baby.jpg 372w, http:\/\/summerofjim.com\/wp-content\/uploads\/2019\/08\/dutch-baby-225x300.jpg 225w\" sizes=\"auto, (max-width: 372px) 100vw, 372px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ingredients<\/strong><br \/>\n3 eggs<br \/>\n\u00be Cup flour<br \/>\n\u00be Cup milk<br \/>\n1 tsp Kosher\nSalt<br \/>\n6 thinly sliced\ngarlic cloves<br \/>\n1 tbsp chopped\nfresh rosemary<br \/>\n6 tbsp butter<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Directions<br \/><\/strong> 1. Set oven to 425\u00b0<br \/> 2. Whisk together 3 eggs, flour, milk &amp; kosher salt. Let sit for 5 minutes<br \/> 3. In cast iron skillet on blazing high, melt butter, saut\u00e9 garlic and chopped rosemary.&nbsp; About 1 minute<strong><br \/> <\/strong>4. Add egg batter to skillet, sprinkle with more chopped rosemary.<br \/> 5. Bake for 18 to 20 minutes, until puffed and golden<br \/> 6.
