{"id":111538,"date":"2025-09-09T15:13:10","date_gmt":"2025-09-09T19:13:10","guid":{"rendered":"http:\/\/summerofjim.com\/?p=111538"},"modified":"2025-09-09T15:13:10","modified_gmt":"2025-09-09T19:13:10","slug":"walts-chili-w-beans-2018-podere-castarini-montepulciano-dabruzzo-cadetto","status":"publish","type":"post","link":"http:\/\/summerofjim.com\/?p=111538","title":{"rendered":"Walt&#8217;s Chili w\/Beans &amp; 2018 Podere Castarini Montepulciano d&#8217;Abruzzo Cadetto"},"content":{"rendered":"\n<p>I was recently given a gift of&nbsp;The Official Disney Parks Cookbook&nbsp;containing \u201c101 Magical Recipes from the Delicious Disney Vault.\u201d In Editor Pam Brandon\u2019s forward she notes that the recipes \u201c\u2026 make it easy to enjoy the dishes at home.&nbsp; Some are fuss-free; others take a little time.\u201d&nbsp;&nbsp; In addition to main dishes, the 101 recipes include starters (not a focus for me), desserts (I don\u2019t do desserts) and drinks (gimmicky with some esoteric ingredients that are fun to drink&nbsp;<em>there<\/em>, but a bit much for home assembly).<\/p>\n\n\n\n<p>As luck would have it, the very first recipe intrigued me.&nbsp; &nbsp;Brandon introduces the recipe, \u201cThis was Walt\u2019s favorite meal.&nbsp;The original Disneyland version of the recipe appeared seasonally through the years at restaurants such as the Plaza Inn and River Belle Terrace.&nbsp; Over time, the ingredients evolved, too, with past versions including dried thyme and paprika. This is the current version and mainstay at the Carnation Caf\u00e9 on Main Street, USA.\u201d<\/p>\n\n\n\n<p>Yes, I have another chili recipe, but I wanted to give this a try. My version uses just ground beef (or ground bison), other spices and is without beans. So adding stew beef (I used cut-up tenderloin) and pinto beans would be a new wrinkle for me.<\/p>\n\n\n\n<p>Chili is &#8220;comfort food&#8221;; and comfort food deserves wine of a similar stripe.&nbsp; And my go-to\u2019s for comfort food wine are: C\u00f4te du Rh\u00f4ne, Barbera, Valpolicella and Montepulciano d\u2019Abruzzo.&nbsp; I have put the Cadetto \u201cMonty\u201d into three different wine tastings.&nbsp; Beautiful fruit and enough muscle to take on the spices in a chili dish.&nbsp; If you prefer \u201cnew world\u201d wine, then a flavorful Zin would do nicely here.<\/p>\n\n\n\n<p><strong><u>Podere Castarani Montepluciano d\u2019Abruzzo Cadetto \u201918 (Abruzzo, Italy )<br \/><\/u><\/strong>With over 200 years of history Podere Castorani spreads across 75 acres of lush countryside in the province of Pescara, Italy, between Majella National Park and the Adriatic Sea. Pleasant fresh blackberries on the nose. Medium-bodied with a tight, crisp texture. Fresh blackberry and pip grip and flavor. 90pts James Suckling<\/p>\n\n\n\n<p>WALT\u2019S CHILI &amp; BEANS<\/p>\n\n\n\n<figure class=\"wp-block-image size-full is-resized\"><a href=\"http:\/\/summerofjim.com\/wp-content\/uploads\/2025\/09\/image-1.png\"><img loading=\"lazy\" decoding=\"async\" width=\"480\" height=\"640\" src=\"http:\/\/summerofjim.com\/wp-content\/uploads\/2025\/09\/image-1.png\" alt=\"\" class=\"wp-image-111540\" style=\"width:360px;height:auto\" srcset=\"http:\/\/summerofjim.com\/wp-content\/uploads\/2025\/09\/image-1.png 480w, http:\/\/summerofjim.com\/wp-content\/uploads\/2025\/09\/image-1-225x300.png 225w\" sizes=\"auto, (max-width: 480px) 100vw, 480px\" \/><\/a><\/figure>\n\n\n\n<p><strong><u>Ingredients<\/u><\/strong><br \/>6 ounces of Tanqueray Gin<br \/>\u00bd ounce of Noilly Pratt Dry Vermouth<br \/>3 blue cheese stuffed olives<br \/>A goodly amount of ice<br \/>\u00bc Cup Olive Oil divided<br \/>\u00be lb beef stew meat<br \/>1 small onion diced<br \/>1 medium green pepper diced<br \/>4 cloves of garlic, minced<br \/>1 lb ground beef<br \/>1 tbs ground cumin<br \/>1\u00bd tbs chili powder<br \/>1 tbs onion powder<br \/>\u00be tsp cayenne pepper<br \/>3 tbs tomato paste<br \/>2 plum tomatoes, diced<br \/>1 can (28oz) diced tomatoes<br \/>2 tbs beef base<br \/>1\u00bd cups of water<br \/>1 can (14.5 oz) pinto beans, rinsed an drained<\/p>\n\n\n\n<p><strong><u>Directions<\/u><\/strong><br \/>1. Put gin and vermouth into a glass pitcher, fill with ice, stir vigorously while incanting, \u201cYou who know all, thank you for providing us juniper and all the other obscure ingredients responsible for creating this sacred liquid!\u201d Strain into a pre-frozen Martini glass of admirable size.&nbsp; Skewer the olives on one of those tacky cocktail swords, place in glass. Immediately begin consuming.&nbsp; Now you can begin the food prep, and the cooking!<\/p>\n\n\n\n<p>2. Heat 2tbs of oil in a Dutch oven over medium heat.&nbsp; Add stew meat and saut\u00e9 meat about 8 minutes, \u2018til browned on all sides.&nbsp; Remove meat and set aside.<\/p>\n\n\n\n<p>3. Add remaining 2tbs of oil.&nbsp; Add onions and green peppers, saut\u00e9 \u2018til soft about 8 minutes.&nbsp; Add garlic and saut\u00e9 \u2018til fragrant, about 1 minute,<\/p>\n\n\n\n<p>4. Add ground beef.&nbsp; Cook, stirring to break up, \u2018til beef is no longer pink, about 10 minutes.&nbsp; Drain excess fat.<\/p>\n\n\n\n<p>5. Return stew meat to the ground beef mixture.&nbsp; Add cumin, chili powder, onion powder, cayenne pepper, tomato paste, diced can tomatoes, chopped plum tomatoes &amp; beef base and water.<\/p>\n\n\n\n<p>6. Bring to a boil.&nbsp; Cover and reduce to simmer over low heat for 3 hours<\/p>\n\n\n\n<p>7. Add pinto beans and simmer for an additional 10 minutes.<\/p>\n\n\n\n<p>8. Garnish with sour cream, shredded cheddar cheese, diced onion &amp; diced tomatoes.<\/p>\n\n\n\n<p><strong><u>n.b.<\/u><\/strong>&nbsp;I shaded back on the cayenne pepper.&nbsp; I had a question mark regarding the addition of water to the recipe.&nbsp; As you might imagine, it made for a less thick chili than the recipe I have used in the past.&nbsp; Although I enjoyed it, the next time I put&nbsp;this recipe into play, I think I will scale back the amount called for.
