Cookouts\u2026 hamburgers, hotdogs, london broil, sweetcorn, \nchicken &amp; watermelon (the basics). Pink lemonade and Iced Tea (served in the \npitcher that had an English hunt scene done in \nrelief).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">There was another food essential \nthat can not be left out. Mom\u2019s vinaigrette salad. A simple composition of \ncucumbers, scallions and cherry tomatoes. It was the \u201cgreen\u201d side dish that \nappeared on the table regardless of the <em>entree<\/em>. This salad was kept in a 2qt jar \nstored in our fridge, and regardless of how it was <em>attacked<\/em>, the jar was never empty, never \nabsent. Obviously it was being continually being replenished during cookout \nseason by the kitchen staff: Mom, Mommie Soph &amp; \nBessie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I loved that salad, and fork in \nhand I would often snack on it straight from the fridge. And when I was a \nteenager (with the metabolism of a hummingbird) on a late night refrigerator \nraid I would knock off two cold hamburgers and several mouthfuls of vinaigrette \nsalad.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I just came across a recipe for a \ncucumber and onion salad which reminded me of Mom\u2019s salad. So on this past rainy \nSunday I decided to give the recipe a <em>test \ndrive<\/em>. I replaced the onions with scallions and added the necessary \ncherry tomatoes. The recipe also called for a tablespoon of pepper. I don\u2019t \nthink Mom used pepper; but I decided to add it to the vinaigrette\u2026 further, I \nthink Dad, who loved pepper, would approve!&nbsp;&nbsp; I also added some fresh dill\u2026 \nbecause I love fresh dill, and it\u2019s in my herb garden! \n<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>n.b.<\/strong> In a \nrecent correspondence with Paula she attributes the original architect for the \nsalad to Mommie Soph. I have placed it with Mom because I saw her make it. \nAlthough she could have easily learned it from Mommie \nSoph.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">JIM\u2019S VINAIGRETTE SALAD IN THE  STYLE OF MOM<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2-3 large cucumbers, peeled leaving decorative \u201cstripes\u201d, and cut into thin rounds<br \/> 1 bunch of scallions, cut into \u00be\u201d pieces (both white and green)<br \/> Several cherry tomatoes (or grape tomatoes) for \u201ccolor\u201d.<br \/> \u00bd cup of sugar<br \/> 1 cup white vinegar<br \/> 2 cups water<br \/> 1 tbsp pepper<br \/> 2 tbsp. fresh dill <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Place in a 2qt jar that has a good  lid to seal contents. Turn upside down and back several times to mix  ingredients. Keep in the fridge.
