{"id":29259,"date":"2019-02-14T13:02:33","date_gmt":"2019-02-14T17:02:33","guid":{"rendered":"http:\/\/summerofjim.com\/?p=29259"},"modified":"2019-03-28T13:06:13","modified_gmt":"2019-03-28T17:06:13","slug":"lox-onions-eggs","status":"publish","type":"post","link":"http:\/\/summerofjim.com\/?p=29259","title":{"rendered":"Lox, Onions &#038; Eggs"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">While it is true that \nMommie Soph\u2019s \u201crecipe book\u201d had neither the volume nor diversity of a The \nFanny Farmer Cookbook, there were elements in her <em>canon<\/em> that were true masterpieces.&nbsp; And I \nam proud to say, nay\u2026<em> incredibly<\/em> \nproud to say that I acquired one!&nbsp; Sorry, it isn\u2019t her <em>gefilte fish<\/em>, which by all rights should \nhave won a Nobel Prize for Food.&nbsp; <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The dish that I have \nbeen able to replicate is her exquisite \u201cLox, Onions &amp; Eggs.\u201d This her one \ndish that I can truly say that thirds were never enough! I would watch her make \nit in our kitchen at 25 Alston \nAve, the smell of the chopped onions frying in a \nhealthy layer of melted butter was intoxicating.&nbsp; Once the onions had moved from \ntranslucent to just turning brown, more butter was added, then a good portion of \nchopped lox would be added to the pan.&nbsp; Once the lox turned from deep orange\/red \nto a light pink, it was time to add some quantity of beaten eggs (and probably a \nbit more butter).&nbsp; And the she would set to business scrambling up this superb \nassemblage! &nbsp;I adored the finished product, and would scarf down two helpings in \na blink of an eye, and would ready my plate for a <em>touch<\/em> more! &nbsp;I could actually hear my \narteries congealing!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When Mommie Soph \npassed I didn\u2019t think too much of this cherished dish, until one day I saw it on \nRatner\u2019s menu in NYC!&nbsp; Well, I assumed that if anyone could make a good version \nof Lox, Onions &amp; Eggs it would be a highly regarded Jewish establishment \nlike Ratner\u2019s on Second Ave. Wrong!&nbsp; It was a crushing disappointment!&nbsp; They \n\u201cshortcutted\u201d it!&nbsp; The Lox and Onions (raw, sliced, not diced!) were simply \nscrambled up with the eggs at the same time!&nbsp; <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And after that sad \nepisode I decided that I was going to take-on making the dish \u00e1 la Mommie Soph!&nbsp; \nAnd be in mind that this was in the day when my efforts at cooking were \nrestricted to flipping burgers &amp; steaks on the grill.&nbsp; Yes, I knew how \ncritical it was to cook the onions and lox in advance of adding the eggs in \norder to successfully emulate the dish that Mommie Soph lovingly provided.&nbsp; \nAlthough I didn\u2019t know the difference between a teaspoon and a tablespoon, I am \nconfident that I created a dish that did Mommie Soph proud!&nbsp; \n<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">n.b.&nbsp; Over the years  I have scaled back use of butter without negatively impacting the end result.  &nbsp;Even without the heavy handed use of butter, I doubt that anyone would mistake  this dish as \u201cfull on healthy\u201d.&nbsp; So be it! <\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"768\" src=\"http:\/\/summerofjim.com\/wp-content\/uploads\/2019\/03\/lox-1024x768.jpg\" alt=\"\" class=\"wp-image-29260\" srcset=\"http:\/\/summerofjim.com\/wp-content\/uploads\/2019\/03\/lox-1024x768.jpg 1024w, http:\/\/summerofjim.com\/wp-content\/uploads\/2019\/03\/lox-300x225.jpg 300w, http:\/\/summerofjim.com\/wp-content\/uploads\/2019\/03\/lox-768x576.jpg 768w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n","protected":false},"excerpt":{"rendered":"<p>While it is true that Mommie Soph\u2019s \u201crecipe book\u201d had neither the volume nor diversity of a The Fanny Farmer Cookbook, there were elements in her canon that were true masterpieces.&nbsp; And I am proud to say, nay\u2026 incredibly proud &hellip; <a href=\"http:\/\/summerofjim.com\/?p=29259\">Continue reading <span class=\"meta-nav\">&rarr;<\/span><\/a><\/p>\n","protected":false},"author":2,"featured_media":0,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[22],"tags":[],"class_list":["post-29259","post","type-post","status-publish","format-standard","hentry","category-the-small-pictures"],"_links":{"self":[{"href":"http:\/\/summerofjim.com\/index.php?rest_route=\/wp\/v2\/posts\/29259","targetHints":{"allow":["GET"]}}],"collection":[{"href":"http:\/\/summerofjim.com\/index.php?rest_route=\/wp\/v2\/posts"}],"about":[{"href":"http:\/\/summerofjim.com\/index.php?rest_route=\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"http:\/\/summerofjim.com\/index.php?rest_route=\/wp\/v2\/users\/2"}],"replies":[{"embeddable":true,"href":"http:\/\/summerofjim.com\/index.php?rest_route=%2Fwp%2Fv2%2Fcomments&post=29259"}],"version-history":[{"count":2,"href":"http:\/\/summerofjim.com\/index.php?rest_route=\/wp\/v2\/posts\/29259\/revisions"}],"predecessor-version":[{"id":29294,"href":"http:\/\/summerofjim.com\/index.php?rest_route=\/wp\/v2\/posts\/29259\/revisions\/29294"}],"wp:attachment":[{"href":"http:\/\/summerofjim.com\/index.php?rest_route=%2Fwp%2Fv2%2Fmedia&parent=29259"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"http:\/\/summerofjim.com\/index.php?rest_route=%2Fwp%2Fv2%2Fcategories&post=29259"},{"taxonomy":"post_tag","embeddable":true,"href":"http:\/\/summerofjim.com\/index.php?rest_route=%2Fwp%2Fv2%2Ftags&post=29259"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
